Desserts can be a challenge when it comes to making smart choices during the holiday season. This colorful and festive holiday treat will feel like an indulgence, yet it is filled with superfoods! Cranberries are the seasonal base of this dessert, which get a sprinkle of dark chocolate. Each serving is finished with a crumble topping made with whole wheat flour and rolled oats to give your dessert an unexpected fiber boost.
1 medium orange
1/2 cup water
1/2 cup granulated sugar
1 (12 ounce) bag fresh cranberries
1/3 cup seedless raspberry jam
3 tablespoons chopped dark chocolate
1/2 cup whole wheat flour
1/3 cup old-fashioned rolled oats
1/4 cup firmly packed brown sugar
3 tablespoons unsalted butter, melted
Preheat oven to 350 degrees F.
Zest the orange to measure 1 teaspoon. Then juice the orange and measure out 1/4 cup. In a medium saucepan combine the orange zest, orange juice, water, sugar, and fresh cranberries. Bring to a boil and then reduce heat and simmer for 10 minutes, stirring occasionally. Remove from heat and stir in jam.
Divide the cranberry mixture evenly among 6 (6 ounce) custard cups that have been coated with cooking spray. Sprinkle chopped dark chocolate on top of the cranberry mixture.
In a medium bowl, combine the whole wheat flour, rolled oats, brown sugar, and butter. Sprinkle the crumble mixture evenly over the cranberry and chocolate. Place the cups on a rimmed baking sheet and bake at 350 degrees F for 20 minutes or until bubbly. Serve warm.
