In the middle of a busy work day, it can be hard to find time for a healthy and satisfying lunch. These tasty whole wheat pita pockets can be prepared the night before and packed for lunch the next day. Instead of heavy mayo, the chicken salad is made with fat-free yogurt and flavored with lemon and curry powder. It is also chockfull of colorful veggies, sliced red grapes for a hint of sweetness, and even some slivered almonds for texture and crunch.
2 cups shredded cooked skinless chicken breast
1 cup halved seedless red grapes
1/3 cup coarsely grated carrot
1/4 cup thinly sliced celery
1/4 cup thinly sliced red onion
2 tablespoons sliced almonds
2 tablespoons golden raisins
1 tablespoon chopped fresh parsley
1/3 cup plain fat-free Greek yogurt
1 tablespoon freshly squeezed lemon juice
2 teaspoons curry powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 whole wheat pitas, halved
4 Red lettuce leaves
In a large bowl, combine chicken, grapes, carrot, celery, red onion, almonds, golden raisins, and parsley.
In another medium bowl whisk together the Greek yogurt, lemon juice, curry powder, salt, and pepper. Pour over the chicken mixture and toss to combine.
Open each pita half and place a lettuce leaf inside. Evenly divide the curried chicken salad among each of the pita halves and spoon inside the pocket.
Time Saving Tip: Purchase a rotisserie chicken at the grocery store and shred the breast meat for chicken salad.
