Ingredients for the sweet potato mixture:
2 ½ cooked mashed sweet potatoes
½ stick melted butter or margarine
1 cup of coconut
1 cup of sugar
½ tsp. salt
1 ½ tsp. vanilla
2 tsp. flour
Ingredients for the topping:
1 cup chopped pecans
½ cup flour
1 stick melted butter or margarine
1 ½ cup brown sugar
- Mix ingredients for the sweet potato mixture well and place in a 9x13 casserole dish.
- Mix together topping ingredients and then put on top of the sweet potato mixture.
- Bake for 30-55 minutes at 350 degrees.
- Let cool and then enjoy!
