David Chang is determined to serve food in his own bold and uncompromising way. Vegetarian options? Don't think so. Pork belly buns? You bet. This so-called "Refined Meathead" puts his own spin on everything from veal head and raw seafood to ramen noodles and kimchi stew. When Chang opened his first restaurant, Momofuku Noodle Bar, in New York City's East Village in 2004, it quickly jumped to the top of the city's Best Restaurants lists with its refreshingly Americanized take on Asian cuisine.
He soon parlayed his success into another adventurous Asian-fusion restaurant, Momofuku Ssam Bar, and in 2008, Momofuku Ko, which serves eight-course masterpieces in such high demand that the reservation list fills up within milliseconds every morning. With the dining attitude of food first and everything else second, Chang continues to cook on his own terms. So don't bother asking him to make you a salad. In the era of superstar chefs, it's exciting to find a chef who lets his food do the talking. And it's even better when that food is fantastic. That's why David Chang is Character Approved.
