What's your favorite diner dish?
A western omelet with hash browns and white toast, preferably served for dinner.
For what would you like to be remembered?
I would like to be remembered for pushing the envelope in gastronomy and by doing so opening the doors of creativity for a generation of young chefs. Giving them the confidence to continue the evolution of cooking, and pushing the cycle forward.
What are a few things on your personal (as opposed to professional) To Do list?
I want to continue to travel the world and being exposed to the food, people, art, and architecture in places of the world that I have not yet been.
I want to bring my two young boys to New York City for an extended weekend.
